[아츠앤컬쳐] 로마는 확실히 세계에서 가장 유명한 도시 중 하나로, 훌륭한 기념물들과 위대한 역사 유산이 가득하다. 그런데 이 영원한 도시에서 북쪽으로 한 시간 거리에 과거의 메아리가 울려 퍼지는 색다른 장소가 있다.

로마인들은 기원전 6세기에 에트루리아인들과 동맹을 맺은 민족인 팔리스키가 살았던 곳, 라틴어로 몬스 팔리스코룸을 “팔리스키의 산” 이라고 불렀다. 로마에서 북쪽으로 120km 떨어진 현재의 몬테피아스코네 마을은 그 이름을 기억할 것이다. 수 세기 후에 이 마을은 여전히 흥미로운 이름의 와인 ‘Est! Est!! Est!!!’로 알려지게 된다.

오래된 전설에 따르면 1111년 독일 왕 하인리히 5세는 교황 파스칼 2세 때 신성로마제국 황제 대관식을 위해 로마로 가던 중이었다. 독일 주교 요하네스 데푸크가 그와 함께 여행하고 있었는데, 주교는 하인 마르티노를 보내 주변 여관에서 발견한 지역 와인을 맛보게 하였다. 마르티노는 모든 여관의 문에 라틴어로 “Est!”(There is!)라고 쓰며 자신의 시음 결과를 기록하고, 만약 그가 더 좋은 와인을 찾을 경우에는 “Est! Est!”라고 두 번 써놓아야 했다. 어느 날, 왕과 주교는 몬테피아스코네에 도착했고 마르티토는 와인을 찾아 맛보기 위해 다시 여관들을 돌아다녔다. 하인은 지역 와인을 발견하고 그 맛에 감명을 받아 여관 벽에 “Est! Est!! Est!!!”라고 세 번 써놓았다.

요하네스 데푸크는 그 와인을 맛보면서, 하인에게 훌륭하게 일을 잘 했다고 칭찬했다. 이어 로마에서 왕을 모시고 돌아가는 길에도 주교는 몬테피아스코네에 들러 며칠 동안 와인을 좀 더 즐겼다고 한다. 하지만 그는 와인을 너무 많이 마셔서 병에 걸려1113년 바로 그 마을에서 사망했다. 그는 그 지역 교회에 묻혔고, 묘비에는 아직도 ‘너무 많은 Est!로 요하네스 데푸크 돌아가셨다.’라고 쓰여 있다. 아마도 전설에 불과하겠지만 그 이야기는 우리에게 교황들조차 수세기 동안 높이 평가해 온 이 와인의 존재를 알게 해주었다.

‘Est! Est!! Est!!!’는 트레비아노와 말바시아 비앙카 포도로 만든 DOC 드라이 화이트와인으로 상큼하고 연한 향과 밝은 밀짚색에, 사과, 감귤류, 꽃향을 느낄 수 있다. 카치오 에 페페 파스타, 카르보나라, 해산물 파스타 등 다양한 첫 코스와 잘 어울린다. 또한, 조개류, 생선튀김, 치즈, 야채 오믈렛에 아주 좋다. 적정 온도 8~10℃로 차갑게 마신다.

Est! Est!! Est!!!

Rome is certainly one of the most famous cities in the world, with its wonderful monuments, legacies of its great history. Just an hour’s drive north from the Eternal City, however, there are other places where echoes of the past resound.

The Romans called Mons Faliscorum, “Mountain of the Falisci”, in Latin, a place where in the VI century BC lived the Falisci, a people allied with the Etruscans. The current town of Montefiascone, 120 km north of Rome, probably recalls that name and centuries later this town became known for a wine that still retain a curious name: Est!
Est!! Est!!!

An old legend tells that in the year 1111 Henry V, king of Germany, was on his way to Rome to be crowned by the Pope Paschal II as Holy Roman Emperor. A German bishop, Johannes Defuk, was travelling with him. During the journey, the bishop sent his servant Martin to taste the local wines he found in the surrounding inns, to make sure that the king had good wines in every town they came to.

Martin had to document his research by writing “Est!”, “there is!”, in Latin, on the door of every inn whose wines he enjoyed and, if he found some better ones, he should have written twice “Est! Est!!” One day, the king and the bishop arrived in Montefiascone and Martin was sent again around the inns to taste the wines he could
find. Here the servant came across the local wine and he was so impressed by its taste, that he wrote three times “Est! Est!! Est!!!” on the wall of the inns.

Johannes Defuk tasted that wine, praising his servant for theexcellent work he did. It is then told that the bishop, after having accompanied the king in Rome, on the way back stopped in Montefiascone for days, to enjoy the wine a little more. He drank so
much wine that he fell ill and died right there in the town in 1113. He was buried in a local church where on a gravestone it is still written: “For too much Est! here lies dead my lord Johannes Defuk”. Though it likely was only a legend, the story made us know this wine that even the Popes have appreciated for centuries.

Est! Est!! Est!!! is a DOC dry white wine made from Trebbiano and Malvasia Bianca grapes, with a pleasant, slightly aromatic flavor, bright straw color, hints of apple, citrus and a light floral note. It matches with various first courses, such as pasta cacio e pepe, carbonara and seafood pasta. Excellent with shellfish, fried fish, cheeses, vegetable omelettes. To be served cool at 8~10℃.
